Mushroom Chickpea Scramble

This chickpea scramble is the perfect protein rich alternative breakfast bowl. Spicy and full of wholesome ingredients, as well as being entirely dairy and gluten free!

Ingredients:

  • 1 can organic chickpeas, rinsed, drained
  • 1 cup sliced mushrooms
  • ½ avocado
  • 2 cup of spinach
  • 2 tbsp nutritional yeast
  • 1 small white onion, diced
  • ¼ turmeric
  • ½ tsp paprika
  • ¼ tsp salt
  • ¼ black pepper
  • 2 garlic cloves, minced
  • 1 tbsp olive oil
  • 1/2 lemon, wedged

Method:

1. In a medium sized bowl crush chickpeas with a fork until completely crushed. Add nutritional yeast, turmeric, paprika, salt and pepper and mix.
2. Heat a non-stick pan to medium heat adding olive oil and onion. Sauté for about 5 minutes until the onion is translucent and soft.
3. Add mushroom and garlic. Cook for a further 5 minutes.
4. Add in chickpea mix and cook through for a further 5 mins mixing thoroughly.
5. Add spinach until wilted. Adjust seasonings to taste.
6. Garnish with avocado, sesame seeds and any fresh greens/micro-herbs like parsley or oregano.
7. Enjoy!
