Roast Vegetables & Smoked Salmon

A great way to revitalise leftover roast vegetables


Ingredients

2 cups leftover or freshly baked vegetables e.g.:

  • Brussel Sprouts
  • Zucchini
  • Carrots
  • Capsicum
  • Eggplant

250g rocket leaves
135g smoked salmon
2 teaspoons lemon juice


Method

Serve hot vegetables with salmon and rocket. Drizzle with lemon juice and add cracked pepper to taste.
