Chicken and cauliflower bake

This dish is a delicious detox alternative to a carbohydrate heavy pasta bake. It’s comfort food at it’s cleanest!

Cauliflower is member of the cruciferous family of vegetables and is mineral, antioxidant and fibre rich making it a useful inclusion to a detox program. Cauliflower is rich in a sulphur compound called sulforaphane which promotes detoxification via the liver and has been shown to help fight cancer. It is a rich source of vitamin K which helps to reduce inflammation, a major driver of chronic illness.

Being rich in fibre means that cauliflower can support healthy, regular bowel movements, supporting digestion.


Ingredients

1 large heads cauliflower, cut into small florets
1 large sweet potato, peeled and cut into bite-size cubes
6 chicken thighs, cut into bite size pieces (organic wherever possible)
½ cup coconut oil
1 tsp garlic powder
2 tbsp oregano
Sea salt or Himalayan salt, to taste
Fresh ground black pepper, to taste


Method

Preheat oven to 200 degrees celsius.

Place chicken evenly into a baking dish and spread the cauliflower and sweet potato cubes on top and around the chicken.

Drizzle coconut oil over them and stir to evenly coat.

Sprinkle the garlic powder, oregano, salt, and pepper on top.

Bake in preheated oven for 75 minutes, uncovered.

Remove from oven and let the dish rest a few minutes before serving.
