Delicious slow cooked chicken

Ingredients

1.5-2kg organic chicken thighs
2 tbsp curry powder
1 tbsp paprika
1 tsp ground black pepper
2 tsp Himalayan or sea salt
4 garlic cloves, crushed and chopped
1 medium white onion
2 cups carrot, chopped in chunks
1 cup brussel sprouts, cleaned and halved
2 cups celery, chopped roughly
1 cup organic coconut milk
1 cup water or homemade bone broth


Method

Place chicken thighs at the bottom of your slow cooker.

Mix the dry spices together and sprinkle over chicken. Lightly toss to coat.

Place  garlic, onions, carrots, brussel sprouts and celery on top.

Combine coconut milk and broth/water and pour over vegetables and chicken.

Slow cook for 6 hours.
