Protein packed salmon patties

Salmon patties are ideal to take to work in a packed lunch along with a crisp salad. They can be made in advance and reheated as needed and even make a great option for a healthy breakfast.

Salmon is rich in omega 3 essential fatty acid which has natural anti-inflammatory benefits. These delicious protein packed patties will help  to stabilise your blood sugar and keep you feeling full and satisfied.


Ingredients

1 cans of salmon 210 g (preferably sustainable)
2 tbsp ground flaxseed or chia seeds
2  whole eggs
1/2 chopped brown onion
2 tbsp chopped parsley
1 clove garlic or garlic powder
1 tbsp lemon juice
1 tbsp olive oil
Generous grind of Himalayan or sea salt
Generous grind of black pepper


Method

Mix ingredients together in a bowl and form into four patties with your hands.

Place in a heated frying pan with a little olive oil for 6-7 min. on each side.

Serve with green salad or vegetables.
