Salmon with mango and kiwi relish

A flavoursome dish which contains kiwi fruit, a fibrous, low glycaemic index fruit which assists in digestion and elimination.


Ingredients

Juice from ½ orange
1 tsp melted coconut oil
1/4 tsp. black pepper
4 salmon fillets

Relish

1 mango, peeled and diced
2 kiwi fruit, peeled and diced
1/2 jalapeno, finely chopped
Juice of 1/2 lime
1/4 cup chopped coriander
Juice from ½ orange
Pinch of Himalayan salt or sea salt


Method

Mix orange juice with pepper.

Pour in zip lock sandwich bag. Add salmon and let sit for 10 minutes.

Heat a little coconut oil in a large frying pan over medium-high heat.

Remove fish from bag and cook for about 5 minutes per side, until it flakes easily.

While fish is cooking, prepare relish by mixing all relish ingredients together.

Serve salmon topped with relish either on its own or with salad or detox friendly vegetables.
