Mackerel and walnut salad

Ingredients

2 tins of mackerel (sustainable)
1/2 a cucumber, diced
1 cup of mixed greens (rocket, baby spinach, lettuce)
1 spring onion, finely sliced
1/4 cup of walnuts
1/2 small red capsicum, chopped roughly
1/2 cup of baby tomatoes, sliced in half
1/4 cup olive or macadamia oil
1/4 tsp Himalayan salt or sea salt
Ground black pepper to taste
2 tsp apple cider vinegar


Method

Toss all vegetables into a bowl.

Chop mackerel fillets into chunks and add to salad.

Add oil, apple cider vinegar, salt, pepper , spring onion and walnut and toss through.
Serve and enjoy
