Cauliflower garlic soup

Ingredients

1/4 cup coconut oil
1 onion, chopped
1 large cauliflower, roughly chopped
1 large broccoli, roughly chopped
2 cloves garlic, crushed and chopped
4 cups water or homemade bone broth
1 tsp cumin powder
1 tsp himalayan salt
1 tsp ground black pepper


Method

Heat coconut oil in a large pot.

Saute the onion, garlic and cumin until soft and translucent for approximately 3 minutes.

Add water or homemade bone broth, cauliflower and broccoli florets and bring to boil.

Simmer for around 20- 30 minutes until the vegetables are soft. Remove from heat.

Once the mixture is cool, puree the soup in a blender.

Season with salt and pepper, serve and enjoy.
