Sardine stuffed avocados

Believe me these are much more delicious than you might expect. Lots of people turn their nose up at the idea of tinned sardines but they are one of the best sources of good quality protein and essential fatty acids and are quite inexpensive.

These can be eaten as a snack or for breakfast or a light lunch, they are quite filling.


Ingredients

2 avocados, medium-large
2 cans sardines in oil (preferably sustainable), drained
2 tbsp chopped chives
Juice of 1 lemon
1 tbsp apple cider vinegar
1 tsp turmeric powder
1 pinch Himalayan salt or Sea salt
Freshly ground black pepper
8 black olives, chopped roughly (optional)
1 tbsp Olive oil


Method

Halve the avocado and remove the seed.

Scoop a little more of the avocado out of the centre and set aside. Leaving 1/2-1 inch of the avocado flesh.

Drain the sardines and place them in a bowl.

Add chives, turmeric and oil. Mix well. Add the scooped avocado flesh, half the lemon juice, olives, apple cider vinegar, salt and pepper and combine well.

Scoop the avocado mixture into each avocado half, drizzle with the remaining lemon juice and enjoy.
