Banana Cake

This banana cake is decadent, satisfying and full of energy boosting ingredients. It’s made with wholesome healthy ingredients, and is vegan and gluten free.

Ingredients:

1 small very ripe banana
1⁄2 tsp vanilla extract
4 tbsp almond flour
1 tbsp maple syrup
1⁄2 tsp baking powder
1 tsp olive oil
1⁄2 tsp salt (optional)
1⁄2 tsp cinnamon (optional) 

Optional Toppings: 

1 tbsp organic nut butter
1 tsp hemp seed
1 tbsp pecan or Brazil nuts, crushed 

Method:

1. Mash the banana with a fork in a small mixing bowl until completely mushed.
2. Add the banana, flour, baking powder, salt, maple syrup, cinnamon and vanilla extract and mix thoroughly until fully combined.
3. Add olive oil into a ramekin coating the base and sides with a paper towel. Pour the banana cake mixture into the ramekin. Add pecan or Brazil nuts on top (optional).
5.Air fry or bake in the oven on 180C for 8-10 minutes or until golden brown and fluffy on the inside. 4. Serve and top with optional toppings.
