Pomegranate Protein Oats

Quinoa flakes are like oats but higher in protein and contain all essential amino acids. Full of fibre and rich in antioxidants this oat like bowl is nourishing and healing, and tastes divine.

Ingredients:

1 cup of quinoa flakes
1 cup oat milk
1 tsp of cinnamon
1 tsp of vanilla bean (seeds scraped out)
1 whole pomegranate (the seeds)
1 cup mixed seeds (pumpkin seeds, sunflower seeds, brown linseeds, chia and sesame seeds)

Method:

1. Add plant milk, quinoa flakes, cinnamon, scraped vanilla bean pod, mixed seeds and the pomegranate all into a pot and heat on low for 2-3 minutes, stirring occasionally.
2. Top with coconut yoghurt, frozen mixed berries and any other condiments on hand. Enjoy!

Note: you can make these as overnight oats stored in the fridge for a creamy cooler texture, perfect for the summer!
