Smokey Jackfruit Pizza

Rich, sweet and smoky in flavour! This chickpea gluten free base is easy to make and super
nourishing. Topped with jackfruit which has a meaty texture and is rich in fibre, vitamins,
minerals. This recipe is full of goodness and a real crowd pleaser.

Ingredients:

Pizza Base:
1 cup chickpea flour
1 cup water
3 tbsp olive oil
½ tsp sea salt
1 tsp mixed herbs

Toppings:
2 tbsp tomato paste
1 cup sliced mushroom
½ red onion, sliced finely
1 organic Jackfruit BBQ 300g (I use the Plant Life Food Co Brand which can be found at most major supermarkets and health food shops)
½ cup cherry tomatoes
½ cup spinach
Handful of rocket
Handful coriander

Method:

  1. Preheat the oven to 230C. Add chickpea flour, sea salt, mixed herbs, 1 tbsp of olive oil
    into a mixing bowl. Slowly add in the water and whisk until completely smooth. Set aside for
    10 minutes.
  2. In a round cake baking tray (or an oven friendly pot) add the remaining 2 tbsp of olive oil
    and pour the chickpea batter in. Cook for 10 minutes or until slightly crispy around the
    edges. Keep the oven hot.
  3. On the freshly cooked base, spread tomato paste evenly on top.
  4. Layer with spinach, onion, mushroom, jackfruit, cherry tomato and cook in the oven for
    15-18 minutes or until golden brown.
  5. Top with fresh rocket and coriander (Optional to add grilled avocado or jalapenos for
    added flavour).
  6. Slice and enjoy!
