Spiced Rice Noodles

These spicy noodles are flavour-packed, protein filled and gluten free! A super easy recipe that takes less than 15 minutes to cook. The enoki and brown mushrooms create a great texture for this dish. If you like a kick of spice this recipe is for you!

Ingredients:

1 cup of white scallions (cut up green stems for garnish)
1 tbsp red miso paste
1 tbsp curry powder
1 tbsp chilli flake
1 cup of enoki mushrooms
1 cup sliced brown mushrooms
1 ½ cup diced organic tofu
1 packet of rice noodles
1 tbsp tamari sauce
½ cup capsicum (any colour is fine)
Salt and Pepper to taste

Method:

1. Boil a pot of water and add rice noodles and cook per packet instructions.
2. Sauté spring onion whites, miso and both mushrooms in a pan. Add in curry powder and chilli flakes.

3. Once they have sauteed, add the tofu, seasoning well with salt and pepper.

4. Add the cooked rice noodles to the mixture, stir everything together then add the tamari sauce and mix in well.

5. Garnish with the greens of the spring onions and add chilli flakes as desired.
