Vegan Fried Rice

I love fried rice and this one is super quick, healthy and easy to make. Full of flavour, veggies and loaded with prebiotic fibers, making it great for your gut too.

Ingredients:
1 cup of green beans diced
1 diced onion or sub with a leek stem.
1 cup of fresh corn
1 diced carrot
1-2 cups of diced mushrooms
1 cup of quinoa or brown rice
1 sheet of nori (cut into shredded pieces)
1 inch of grated ginger
4 garlic cloves
3 tsp of soy sauce
1 tbsp of miso paste

Method:

  1. Cook rice in a rice cooker or by bringing a pot to boil and set aside.
  2. In a heated pan add onion, garlic, ginger and sauté for 3 mins. Add in mushrooms, soy
    sauce, miso paste and stir through.
  3. Add in corn, carrot, green beans and mix through. Add the rice in and mix.
  4. Serve with fresh greens, kimchi and nori on top! Enjoy!
