Basic Muffin Mix

For those of you who need to grab something a run in the morning these might be for you. They are also excellent to have on hand as a snack.

A word of warning here, these are quite moorish! We use a small amount of Creme fraishe for this recipe, it is a heavy cream that has been soured with a bacterial culture. It is high in butter fat and relatively low in carbohydrates, despite this you should limit yourself to one batch per day maximum and always test your ketones daily as some people are more sensitive than others.

Variations of this muffin mix are limited only by your imagination. Try any combination, including; berries and coconut or cheese, herbs and bacon.


Ingredients

1 cup almond meal
1 egg, beaten
1 teaspoon baking powder
Stevia drops to taste
1 teaspoon vanilla extract
2 tablespoons heavy cream


Method

Preheat oven to 180 degrees.
Grease a muffin tin.
Mix the dry ingredients together.
Blend egg and cream together and then add to dry ingredients.
Bake at 180 degrees until muffins are golden brown (approximately 15 minutes).
Cool slightly, before serving


Makes 4 medium sized muffins per batch
