Basil Tomatoes and Sautéed Ham

This makes a delicious, speedy breakfast. The aroma of fresh basil enlivens this simple but delicious dish.

I found this to be an ideal use for left over Christmas ham, however any good quality, freshly sliced leg ham will do. Keep in mind that even good quality ham will contain a reasonable amount of salt, so limit this dish to once a week if you are watching your sodium intake.


Ingredients

2 medium sized tomatoes, sliced
200g sliced leg ham
Fresh basil leaves
2 large handfuls of baby spinach leaves
Drizzle of extra virgin olive oil
Sea salt and ground pepper to taste


Method

Sauté the ham in an oiled fry pan over a medium-high heat until it begins to brown (or 2-3 minutes).

Place 1 large handful of baby spinach leaves on each plate

Divide ham between the plates and put half on top of each bed of spinach

Top with sliced tomato and add freshly ground black pepper and sea salt to taste

Drizzle with olive oil and add basil leaves
