Zucchini Fritters

These tasty treats are a great substitute for hash browns and can be part of a big lazy Sunday morning breakfast with all the trimmings, eggs, zucchini fritter, mushrooms etc, or they can be a stand alone breakfast by themselves and are actually quite filling.They can be made the night before and warmed up in the oven in the morning for a super speedy breakfast.

Zucchini contains quite a bit of water, so the trick to getting these right is squeezing out any excess liquid as you make them into patties. You can even quickly heat the zucchini in the microwave for 30 seconds first so it releases some of its liquid. This way you can drain it first before mixing it with the other ingredients.


Ingredients

1 cup grated zucchini

2 eggs
1/4 cup of almond meal
1 tablespoon olive oil for cooking
Sea salt and pepper to taste


Method

Combine all ingredients in a medium bowl.

Stir until well combined.

Heat oil in a large pan over medium-high heat.

Mould mixture into medium-size balls with your hands, squeezing out any excess liquid.

Press fritters flat into pan with skillet when cooking. When brown on one side, turn and cook the other side.


Serves 1
