Grilled Salmon with Dill Butter

Salmon is high in protein, minerals and omega 3 essential fatty acids which are vital for nervous system, eye health, cell membranes and cardiovascular health to name a few. Most people think that eating fish once a week is enough to meet your essential fatty acid requirements. It’s not, I think 3-4 times per week is optimal. This simple a delicious family favourite is an ideal way to boost your omega 3 intake. Don’t forget to load on the greens to make sure that you are keeping you meal in balance.


Ingredients

2 salmon steaks
2 tablespoons extra virgin olive oil
3 handfuls of fresh of rocket leaves (or mesclun mix)

Dill Butter Sauce

60g unsalted butter
Juice from ½ a freshly squeezed lemon
2 tablespoons dried or chopped fresh dill


Method

Brush both sides of the salmon with olive oil and grill under high heat for 3-4 minutes per side.

This should leave your salmon slightly pink on the inside, cook it for a little longer if you want it well done. Remember, the salmon will continue to cook once it has been removed from the grill.

To make the sauce, heat the butter in a small saucepan, stir in the lemon juice and add dill.

Spread rocket over a dinner plate, place salmon on top and drizzle with warm sauce.
