No Carb Nasi Goreng

This delicious dish is a favourite and has been handed around to all of my friends. Nasi Goreng is a traditional Indonesian fried rice dish that has a distinctive blend of flavours. The beauty of this dish is that it keeps all the flavour and without the carbs! Delicious, quick and easy to make, this dish is a real favourite.


Ingredients

2 large chicken thigh fillets
8-10 fresh prawns, peeled and diced roughly into cubes
1/2 medium white onion, peeled and diced
2 1/2 cups of roughly diced cauliflower
1 carrot peeled and diced
1 clove of garlic, crushed
2 tbsp of Sambal Olek (available from the Asian section of the supermarket)
3 tbsp Tamari (wheat free soy sauce)
1 tsp fish sauce
a pinch of sea salt
2 eggs
Fresh coriander
Coconut oil for frying (can also use olive oil)


Instructions

Prepare all ingredients first so you are prepared for stir frying

Heat a little coconut or olive oil in a large wok or deep frying pan

Stir fry prawns first with a pinch of salt for a minute or two until cooked then remove from wok and set aside

Stir fry chicken in a little coconut or olive for around 4-5 minutes then remove from wok and set aside

Add a little more oil of choice then stir fry the onions until they start to soften

Then add cauliflower, carrot, garlic, sambal, Tamari and fish sauce and stir fry for a few minutes into vegetables and nearly cooked

Add the prawns and chicken back into the wok and toss together for a few minutes completing the cooking process, then remove from heat

In another smaller frypan add a little oil of choice and fry two eggs

Chop some fresh coriander, toss through the stir fry just before serving, serve in bowls and add fried egg on top, garnished with extra coriander


Tip

This is the Samabl Olek I use, it has very low carbohydrate and is packed full of flavour. It should be readily available from the Asian section of your local supermarket
