Chicken Caesar Salad

One of the most popular salad recipes


Ingredients

70g chicken breast (cooked weight)
1 poached egg
1 tablespoon lemon juice
1 tablespoon water
1 teaspoon cracked black pepper
1 teaspoon olive oil
2 tablespoons traditional mayonnaise
1 cup Cos lettuce
Anchovies (optional)


Method

Cook chicken pieces in hot pan till brown. Remove chicken from heat and allow to cool. Mix together the lemon juice, mayonnaise, warm water, oil and pepper into a bowl. Place the salad greens, chicken and eggs into a bowl. Pour salad dressing over the salad. Dress with anchovies.

Serves 1
Note: For 20g protein serve leave out the poached egg.
